Elizabeth has a Bachelor of Science degree in Dietetics & Nutrition
from Florida International University and completed her Dietetic
Internship at the New York Institute of Technology. She is a Registered
and Licensed Dietitian, a Certified Diabetes Educator, and a Certified
Insulin Pump Trainer. Elizabeth has experience working in both
in-patient and out-patient health care settings, and is fluent in
Spanish. Prior to her position at Liberty, Elizabeth was the lead
dietitian at the Diabetes Research Institute, where she led the
Nutrition and Spanish programs. She is an active member of the Greater
Miami Association of Diabetes Educators and recently traveled to Ecuador
to conduct a 3-day diabetes education program for children with type 1
diabetes and their parents. She enjoys staying active and emphasizes the
importance of healthy eating and exercise when counseling patients with
diabetes and answering their diabetes questions.
