We all need a variety of great recipes for boneless breast of chicken, and this easy to make chicken piccata is one of the best.

Ingredients

  • 1 whole boneless, skinless chicken breast
  • 2 Tbsp whole wheat pastry flour
  • 2 Tbsp Extra Virgin Olive Oil (EVOO)
  • 1/4 cup white wine
  • Juice of one lemon
  • 2 Tbsp capers, drained
  • 1/4 cup parsley for garnish
  • Dash (1/8 tsp) salt
  • Pepper to taste

Instructions

  1. Slice chicken breast into 8-10 thin pieces (cutlets).
  2. Mix flour with salt and pepper.
  3. Dredge chicken in flour.
  4. Heat EVOO in large frying pan over medium/high heat. Cook chicken until golden on both sides. It is OK if some bits of brown stick to pan.
  5. Remove chicken from pan and place in a serving dish.
  6. Deglaze the pan with white wine. A poof of steam will release and the wine will evaporate quickly.
  7. Add the capers and lemon juice.
  8. Swirl the sauce around in the pan for a few seconds
  9. Pour over chicken.
